Who wrote it: Edited by the staff of the Culinary Arts Institute, this Encyclopedic Cookbook is an 1,100 page American reference cookbook published by the Culinary Arts Institute of Chicago and distributed by Grosset & Dunlap, with a copyright of 1971 (this printing dated 1976).
What it's about: Billed on its own jacket as thirty separate cookbooks in one, it covers everything from soups and sandwiches to canning, carving, and pressure cookery, a kind of do-everything kitchen reference.
Special features: The book retains its original pictorial dust jacket and includes a thumb indexed Quick Reference Index printed directly on the back board for fast lookup while cooking. It also has the fun polka-dot cover under the dust jacket.
Condition: Red cloth hardcover with pictorial dust jacket. Jacket shows wear at the spine ends and edges with some small tears and rubbing; boards are otherwise solid. Please review all photos carefully, and email me with any questions.
