Malzbender's Practical Recipe Book—also titled on the title page Praktischer Ratgeber für Conditoren, Cakebäcker und Brotbäcker und Candy-Macher (Practical Guide for Confectioners, Cake Bakers, Bread Bakers, and Candy Makers)—is a professional baking and confectionery manual compiled by Mathew Malzbender and published in Milwaukee, Wisconsin, in 1923.
This is the fifth revised and enlarged edition of a work originally copyrighted in 1910, attesting to its sustained popularity among the professional baking trade. The book is printed entirely in a parallel bilingual format: every page is divided into two columns, with the German text in traditional Fraktur (Gothic) script on the left and the English translation in Roman type on the right, recipe by recipe.
Malzbender designed it deliberately for the German immigrant baker: as the preface states, the dual-language layout was intended to give foreign-born bakers "a welcome opportunity to become readily acquainted with expressions used by the baking profession in this country."
Published in Milwaukee, one of the most heavily German-American cities in the United States, the book covers confectionery, pastry, bread baking, hotel pastry work, and candy making.
Condition: The green cloth boards show significant wear with rubbing and soiling. Both hinges are cracked and the binding is stressed, with the text block beginning to separate from the boards. Interior pages are heavily foxed (brown spotting) throughout, with notable brown staining on multiple pages.
Pages are tanned with age. The front inside cover bears a pencil inscription reading "Rudolph Cigman / Bakery," indicating this was a working copy used by a professional baker. Despite condition issues, the text is fully legible throughout.
